I have purchased Adobe Acrobat 2017 (online, no disc) for use in my school and am sure I have read somewhere that it can be installed on two machines as long as it is only used on one at a time.  Is this correct?

Yes - one machine at a time AND only one person ever. So, for example, it cannot be used by Student A on Monday and Student B on Tuesday, even on the same one computer.
