Hope you are doing well and sorry for the trouble. As you are unable to save the PDF and getting the I/O error.

 

Please look at the correct answer marked in a similar discussion https://community.adobe.com/t5/acrobat/the-document-could-not-be-saved-a-file-i-o-error-has-occured/... and see if that works for you.
