Adobe sign prefill fields do not respect their property settings made in Prepare Form tool

I've discovered that in latest version of Acrobat DC, the fields that I define for prefill for Date, Title, Signature, etc--these fields and their unique settings are not respected and carried over when sending an Adobe Sign doc out for signatures. 

When it comes into the Request Signature stage, the fields no longer say Date, Title, Company, etc while the Signer fields still show their respected field property types. 

At this stage, there is nothing you can do to set them. Right click on the fields only shows Text data type and no other options and all signature fields are grayed out for the Prefill (selected from dropdown)

So, patently broken at this stage and unusable.
