Batch converting TIFFs to PDF Color inconsistency

Hi,

I'm batch converting high res TIFs and combining to a lower res PDF, and getting color inconsistencies with some of the pages -- square blocks that have no color, but in areas with more contrast for example with text, the color is preserved. I'm seeing it more on pages that have less text or on pages that are very similar to the background it was photographed on. This is a work setting so I'm unable to attach the whole document but hopefully you can see from the screenshots what I'm talkin about. Anyone experience this?

Adobe Acrobat Pro DC version: 2021.001.20138

I'm using these settings under preferences --> Convert to PDF --> Edit Settings:

Scan Optimization is checked, and under additional settings:

'Apply Adaptive Compression' is checked.

Color/Grayscale: JPEG2000

Monochrome JBIG2 (lossy)

All settings under Filter are turned 'Off'

Color Management tab:

RGB: sRGB IEC61966-2.1

CMYK: US Web Coated (SWOP) v2

Grayscale: Dot Gain 20%
