Cant launch Adobe or any PDF without getting the "We cant verify your subscription". Worked fine until yesterday. Company IT said that our Antivirus software was blocking Adobe from opening. They went in and supposedly updated permissions for Adobe not to be interrupted..and it worked for a while but today the problem returned? Any ideas?

When you say that the error returned does that means that the Antivirus software is blocking Adobe Acrobat from opening, or is it a different problem in addition to the Antivirus?
In any case, and if the Antivirus is the reason of the problem, see one approach that a user implemented in the following thread:
The workaround that was shared in the link above may not be related to your case, but since you've mentioned about the problem returning after a fix seemed to have worked partially, maybe the task scheduler is triggering an event for the AntiVirus or a firewall rule that beed to be disabled or blocked.
Now, that said, it is your IT's responsibility to go further and confirm if this happening with every PDFs that are opened with Acrobat and with every PDF that is opened in web browsers, OR, if this problen returned because the Antivirus (or the Adobe Acrobat Security (Enhanced) sandboxing preferences) is actually doing its job in protecting the systems when only certain PDFs are opened with Acrobat.
