changing font creates formatting issues

I am trying to take a PDF generated by Vellum and change the font of certain paragraphs.  When I do, it creates formatting errors:  inserting a weirdly formatted space between letters of a following word or indenting later lines, for example. The word "That" becomes "Th at," and when I put my cursor in front of the "a" and backspace, the "Th" disappears with one keystroke instead of two. I can then retype it, but the paragraph indent is off.

 

I am on a Macbook Pro running 10.13.6.  I am new to Acrobat Pro, and I only need it for this one thing. (Will subscribe and unsubscribe as needed.)

 

So...is there something I'm doing/not doing to change a font? Or is this something that Acrobat isn't good for and I should look elsewhere?  Thanks very much.
