Copies saving with old information or old copies changing to new information

I have created a document with fillable forms. I use the document every day and enter different information in some of the fields. I then save with the current date. When I open a previous days document, the entry I made in todays form has over written and replaced information in the document for the day before. Sometimes for each day a week back. The other problem is I enter information today and save with todays date. I reopen it and it has infomation from a document saved a day or a week prior to today.  I cant find the problem and it just started recently. Using Adobe Acrobat DC.

Is the problem just with the date field, or with other fields, too?
