I just created a fillable pdf now I want the person to be able to sign the document digitally - how?

Thanks for attaching the form. 

It seems like you have assigned a simple text filed at "Signature" place. If you would like to get it signed digitally, then  you need to assign the "Digital Signature" form field. 

1- Open form in Acrobat>Tools>"Prepare form" mode

2- Select the Digital Signature field from the menu-bar at the top.

3- You can also add signature options from "Properties view". Like Appearance, font, color etc
