Where can I add the creator of a PDF.  I have scanned some manuals and booklets and have given the writer credit in the author slot.

Operators of scanners do not get copyright or credit, they are just technicians with no legal status. If the operator gets a copyright credit because of particular work they have added, then they are now an author and should be mentioned as such.

The "creator" is the software used. Not a credit to a person. There is no field for such a credit.

That seems odd.  Nowhere to give the one who made the PDF any mention.  That's not right!

You can use the "PDF Producer" metadata by using this script in the JavaScript Console, or in an Action:

this.info.Producer= "John Doe";

I tried to do what you listed.  Apparently I am not computer savy enough as it did not work.

Changing the Creator is considered VERY BAD PRACTICE. This information is used to identify software, and is sometimes needed to solve problems. If you do this in a PDF it will look strange, amateur and inconsiderate. I strongly recommend against this misuse.

OK, thanks.  I will put my website or logo on the front of the manuals instead.

Is it a better practice to leave it empty, as most of PDF creators does?

Well, it's better to leave it empty than to put the wrong thing there, for sure!

Creator: "If the document was converted to PDF from another format, the name of the application (for example, Adobe Framemaker) that created the original document from which it was converted."

Producer: "If the document was converted to PDF from another format, the name of the PDF application (for example, Acrobat Distiller) that converted it to PDF."

Interestingly, if the file was not made by conversion (for example it was made with a graphics library) this does not mandate any particular behaviour, but most libraries set themselves as Producer in this case.
