Wie kann ich einen erstellten Stempel (als Formular mit Datum und Textfeldern) in eine PDF-Datei einfügen und den Stempel dann "befüllen" mit Datum und Namenskurzzeichen...

Once a stamp has been applied it can no longer be edited (only moved, resized, etc.). To do this you would need to use a dynamic stamp that prompts the user to enter the date and other texts when it is applied. If they want to edit their input they'll have to remove the old stamp and then apply a new one.
