Editing PDF text of a Spot Color Separation

We have final art from clients that doesn't have the original content in Text format anymore. Though our files are exported to PDFs as a 1 or 2 color spot color job using PMS color separations.

 

These all read fine and acrobat preflight analysis shows the colors properly. Though, once you choose to edit the pdf for example changing some text. It autorecognized and allows the edit. But once you save the file, whether new or over the old one, the final PDF ends up becoming CMYK,

 

How can this be resolved?

The Edit tool of Acrobat Pro uses RGB colors only.
You need Pitstop or Callas pdfToolbox.

Thank you. Though the color options are there in these, they don't allow for editing the placed text. At least not from what I see, specifically if its from placed art. Doesn't seem to convert to text. So we'll have to first make edits in Acrobat, then edit the color back to Spot afterwards.
