Embedding font problem for Amazon KDP

I have a pdf file for a Print on Demand (POD) book that has a font embedding problem that I am trying to get Amazon's latest POD platform, Kindle Direct Publishing (KDP), to accept. After spending nearly 2 weeks reading through various online forums, trying to work with KDP technicians (who have tried to be helpful, but who seem to have only rudimentary knowledge), fussing with settings in Acrobat DC Pro, I am just at a loss. All of my fonts seem to be embedded except one, Arial Unicode MS*1, which I suspect is not really a font because of the "*1" business. I have a free version of Arial Unicode MS that I found online installed on my computer, but that hasn't helped much. See screenshot below.
When uploading the PDF file to the KDP platform, I keep getting one (yes, ONE!) error related to this issue that I cannot override to approve, so I have to fix it. When I go into Acrobat, I find the spot, go to edit it, see that Adobe Sans MM has been substituted, change it to my Arial Unicode MS, and then re-upload it to the KDP platform and start the process all over again. I have now done this process at least 10+ times. Each time, KDP says I have only one error, but the font embedding error is now in a new spot on the same page or two. Each time I resave the file (by "printing" it as a PDF), it embeds my version of Arial Unicode MS into the file yet again. The Properties dialogue box tells me I now have that font embedded 10 times.
I can run Preflight, but I'm not clear about what changes to make as it keeps saying the file can't be saved because of the embedding problem.
In a normal world, I would go into the original file in InDesign or Word or whatever, but that is not possible in this case. The file is a 460 book that is a reprint of a title our press published in 1995. So, the original file no longer exists. What I am working with is a scanned doc from a physical copy of the book. The original text is mostly in 9 pt type. It's a very long and very ugly book, but we need to reprint it. The amount of time it would take to convert it to a Word doc, proofread for scanning errors, and then reformat it to reproduce the ugly old book would be incredibly time consuming.
Any ideas for how I can solve this one problem and get my file to load on KDP? I don't care so much about how it looks, as it is a reprint of an originally published book.

Whith what tool did you create your book? That tool needs to have added that font.

The digital book was created from scanned images made of each page in the physical 460-page book. I do not know what software the scanner used. After being scanned, the pages were compiled into a single PDF file. I am using Adobe Acrobat DC Pro to edit the book.

Missing fonts can be embedded using an Acrobat Pro Preflight Fixup (Embed missing fonts) or using an Enfocus PitStop Pro Action List.

I tried using that Preflight function, but it still would not embed that one font.
