Is it Print to Adobe PDF function that has stopped working after installing the latest update or is it Print and Save function has stopped working?
Which application is being used to use the "Adobe PDF" printer? I guess its MS Office.
If Adobe PDF printer has stopped working, then you may try the following steps to see if that helps-
1- Open Acrobat>Help>Repair Installation
2- Please share the exact version of Acrobat you are working with. Is it the latest one 20.012.20048 ? If not, then please check for update.
3- Nothing helped? Follow the instruction given in this help article https://helpx.adobe.com/acrobat/kb/troubleshoot-acrobat-pdfmaker-problems-office.html
While in Acrobat, I tried using Adobe PDF and Microsoft Print to PDF and that is where the file documents are being created.
From Office, I can create a PDF either by Saving as a Adobe PDF, or printing as Adobe PDF or Microsoft Print to PDF.
Ran repair installation twice. Rebooted computer after each repair without any luck. Still creating a File document instead of a PDF.
Navigate to Acrobat>Print>Advanced>uncheck "Print to File">OK
