Fill & Sign Limited Options

On Adobe Acrobat DC Pro, I created a fillable form, but my options for the Fill & Sign tools are now limited.  I cannot add text, a crosscheck, a checkmark, a circle, line or dot.  All I can do is add a signature.  How do I access these options again?

Delete/remove the form fields.

Is there any way to maintain the fillable fields, yet still have the options to add text/check marks, etc?

Use Tools > Prepare Form and add text fields, checkboxes, and so on.
