Hi there,
I would like the PDF to fillable again. I have checked the security tab under properties and everything is allowed so I'm not sure what the issue is.
If someone can help please advise.

Yes, that's correct. When you sign the file it locks its contents and prevents further editing. If you don't want that to happen then you need to use a digital signature field and set it to not lock the fields when signed.
