When my form fields are filled out they do not export any values into the csv or xml file when using "Merge Data Files into Spreadsheet." If I try and export to an FDF file, that also appears empty. And if I try and distribute my PDF to a external file(to create a response file), it crashes on me.
Some additional information on the file. I can continue to go in and add more form fields but they are also not recognized. My document is quite large, 123 pages with over 2,500 fields in total. It also has active JavaScript to hide/show fields based on selections, which all currently still works. I can save it as a Reader accessible file, but the form fields behave the same way, they capture data on the sheet, but on any type of export the fields and data don't exist. I have no security on the form, or dynamic components.
Any help with this issue would be appreciated.

In addition to the problem listed above I started to get a "Field Malformed Error".
Since I could still access my fields I decided to cut my loses. I started a fresh PDF and cut and pasted each page from the old PDF into the new one. I did cross one page that had a "bad" form field that could not be copied or deleted. I don't know it this was the source of my issues, but it is not in the new document. Fortunately I did not lose any JavaScript or other form settings, and my most time consuming process was realigning all of the form fields to the right position on the page.
While it doesn't correct the original document I am back up and running with a fully functional PDF, in the event someone else has the same issue.

Hi,
I have had a little experience with exporting XML. Have you changed the DataBinding of the objects on the form? On the Object > Binding properties tab, ensure that the Data Binding setting is not set to No Data Binding. Select Use name (nameOfField).
Any field set to No Data Binding wont be exported.

Unfortunately I am using the PDF form field editor right in Acrobat Pro X, I am not using LiveCycle. I don't think Acorbat Pro X has a data binding option. At least I couldn't find one. Thank you for your suggestion!
