How do I fill out a section of a form after signature?

I have Acrobat Pro DC and what I want to do is make a form that a customer has to fill out and sign, but once it comes back, I would like to have a section where the employee who received it has to fill out the date it was received, how they paid, etc. However, I'm finding that once a form is signed, it is locked. Is there a way to achieve this?

Hi Kelli

Hope you are doing well and sorry for the trouble. As described you want to fill in the form after it is signed by a user.

Signature should be the last thing to be done on the PDF form. Once the PDF is signed it gets locked for further changes.
