How do I lock some parts of text?

Hello, I made custom coloring pages in illustrator, opened it in acrobat and then clicked "prepare form."

 

One page says something like "Happy Birthday Jason." I  don't want people to be able to edit "Happy Birthday" but I want them to be able to edit "Jason" so they can change it to their child's name. Is it possible to do this? How do I do this?

Add the "Happy Birthday" part as static text (or a separate, read-only text field) and the name part as an editable text field.
