How do I unhighlight text that was highlighted accidentally?
BTW I can't believe that its so ^%$#@& difficult to get an answer to such a simple question !!!

After using Adobe Reader XI or Acrobat to apply a Highlight annotation you can remove it with ease.
Using the Highlight tool select the highlight annotation, tap the Delete Key.
Or open the Comments List, select desired highlight annotation and delete.
There are some others but these two will suffice.

I was finally able to remove the highlight quite accidentally. I'm on a Macbook, OS 10.10.2, and had a 57-page pdf that I'd applied yellow text highlight using software I can't remember--either Adobe Reader or Preview. I was unable to remove the highlight with either of those apps, so I downloaded Acrobat Pro XI.
Here's what I did to remove the highlighting:
1. Default Tools>Content Editing>Edit Text & Images. That created a movable rectangle around every paragraph of text.
2. I moved that text by moving the rectangle, discovering that the text moved independently of the applied yellow highlighting.
3. For each paragraph I wanted to UNhighlight, I moved that text rectangle a little bit away from the yellow highlight bars. Then I clicked on each yellow highlight bar, line-by-line, and pressed DELETE. The highlighting was gone.
4. I repositioned the UNhighlighted text to its original location and hit SAVE.
Problem solved (although I'd hate to have to do this manual process for lots of pages, this worked fine for the few pages I needed to clear).

I notice this question is unanswered, and I share your frustration. This should be so simple and intuitive, and it's not - it's bloody &*^% lame. I've got a huge doc to deal with and I'm stuck - instead of working, I'm doing this.

It was answered correctly by CtDave above. If that answer does not work in your case you'll need to provide more information about what kind of highlights you're talking about (did you add them? if so, how?), and what exactly the situation is.

What I'd described was good to go for "XI". Just walked through using "DC" (Reader / Acrobat) -- for me, worked a-ok.

Yes, this sort of works with Acrobat Pro DC but it is stupid and awkward. Used to be all you had to do was change the highlight color to "white". This process has added hours to my work and for what this program costs that's terrible.
