How to sign a document twice?

I am attempting to digitally sign a document but as soon as I sign in one location, the blue signature field disappears for the other. I would have guessed that means I only need to sign it once but it still comes up that there are unsigned signature fields. Any help would be appreciated.

In which PDF viewer program are you signing the PDF document from?

Did you create the form? Do you have Adobe Acrobat?
