Hope you are doing well and sorry for the trouble. From the description it looks like you wan want to add more signatures in Fill and Sign > Sign Yourself option.

We can add one signature and one initial in Fill and Sign > Sign Yourself option as its a product behavior. in order to add more variation we need to first remove the previously added signature/initial and then add a new one.  You may submit your request with the engineering team using the link https://www.adobe.com/products/wishform.html
