Scanner - Changing default to letter from legal

I have researched and researched this issue - the default in the scanner tool is "legal" and I want the default to be "letter". 

I have also dug into the settings in the scanner tool, and in Settings outside of the scanner tool. The settings outside of the scanner tool indicate that the default is set to Letter, but it's not. 

When I go to scan, it has me stuck using the "Scan Settings/Default."  When I go into these settings, there is an option to select paper size, but it's "grayed out" and won't let me change it. 

This is pretty annoying when you are scanning a lot of documents. Anyone have any advice?

Hope you are doing well and sorry for the trouble. As described, you want to change the default page size to letter in scanner.
