I am clicking on the 'organize PDF' and it is going to a webpage, with seemingly no options to extract pages from a PDF. I have a 69 page document and only need 6 pages of it. Can anyone help with this?

You're using Reader. You must use either Acrobat or the online service PDF Pack (the latter can't extract pages directly, though, only delete the other pages from the file).
