Sharing documents option

I added sharing and added an email to the sharing list does that mean that they have access to all.my files or is it just there in case I want to actually send them something and other than that they haven't got access to any of my files ? 

If they have got access how do I delete the email  ??

Others can only access the shared document. You can't delete a sent email. You can unshare the document.
