When I open a PDF it appears fine, but once i try and insert it into another PDF it changes some of the text to either weird characters or chinese text. I can't seem to find a solution, i've found two other threads with similar problems but those fixes did not fix mine...

AS it turns out, this is fixed very easily.

Hi Cailinc,
Where did the errant PDF come from? Did you make it or did it come from an unknown source?
The reason why I ask is that if the fonts were not embedded, it is very likely that the fonts in this document are being taken over but the fonts in the larger document. Since there‘s no way for the document to know what characters are what (it’s only trying to match/substitute numbers as best it can), it’s all to easy for it to substitute Chinese or anything else.
You might also also look under Properties to see if there are any embedded fonts and also the creator of the document.
Please let us know

It came from a different source. I went into distiller and selected all of the text options to be embedded.
For the document itself, under document properties>fonts all of the text is either embedded, embedded subset or trutype.
Not gonna lie this is way over my head!
