Is there a way to associate an email address with my Acrobat.com account and then send PDF attachments from that email address, such that they will be added to my online documents? Other cloud-based services have this feature (Concur, TripIt) and it's very easy to manage files. Typically, the receiving email address is documents@adobe.com or files@adobe.com or similar.

Currently, there is no way to mail a file directly to your Acrobat.com online account.
