Creating a fillable form that automatically detects fillable fields

I used to be able to open up a PDF form and after selecting the e-signatures option, the platform would provide the option to automatically insert the fillable boxes.  This seems to no longer be the case.

 

Can someone tell me how to get this option back?  I have a lot of fields for my users to complete including a form that consists of a measure for each question (checkboxes form 1 to 5 for multiple boxes).  Adobe used to automatically select these items as fillable.  How do I get to this?  Seems the upgrade has changed a few features.
