How can I publish my pdf catalogue as a book - flipping pages rather than scrolling pages?

If you have Acrobat Pro, you can apply page transitions to your PDF. Please see: Adobe Acrobat X Pro * Add page transitions (these instructions also apply to Acrobat Pro XI).

"Flip" pages is Flash; not PDF.
