You can only resize signature .

That is untrue. I have a version of my signature I like and one I do not like. Therefore, there has to be a way to edit my signature.

Are you referring to the signature stored in the Adobe Fill and Sign tool? You can change the style of the signature as highlighted in the screenshot, however, it does not allow users to change the font of the signature directly.
