In Adobe Fill & Sign you can add text, check marks, an X, a dot, and a circle as well as sign documents.  It does not "edit" the existing content of the document.  Here is a tutorial: Tutorial: Introduction to Adobe Fill & Sign

It sounds like you want to take a PDF and export to Word and edit?  Did you already try that and then were not able to edit the text in Word?

You might want to post another question asking about editing the Word doc you exported from "Export PDF" (assuming that is the service you are using in https://cloud.acrobat.com) so the right people see it...
