How do I stop auto renewal?

You can't turn off auto-renew due to questionable practices by Adobe. I'd expect a class action suit in the EU at some stage.

This seems like a great suggestion - there's no way to see my renewal date and no way to pre-emptively cancel. Adobe is beginning to piss me off too often.

You may check your active plans and related information via the Adobe account. Please open this link https://account.adobe.com/ and sign in using your Adobe ID (email address) and password. There you may check your plans under the Plans and payment tab.
