Does anyone have any recommendation of the best way when creating a form in Acrobat DC to have several instances of fields where the user can browse, resize (to form field) insert a photo? Amateur here so be gentle!

You can use the so-called Image Field (it's really just a button with an icon), but it's not going to work on a mobile device if you open it in Reader.
