Saving a PDF as a PDF Booklet

Why does Adobe Acrobat DC not allow you to print to PDF or save/export your PDF in booklet format?

I need to save a document in a variety of formats - one as a booklet for people to download, print and fold into an A5 booklet. When I try to do this Acrobat informs me it is not supported. How can this be resolved in Acrobat? (Not through third party options - there is a free one but it seems rediculous this is not something you can do automatically in this software.)

If you're on a Windows machine you can use the Booklet option under the Print command to print the file to the Adobe PDF printer, creating a new file in booklet format.
