I'm seeking guidance on how to extract the signature image from a signed PDF by Adobe Sign. Specifically, I'm interested in obtaining the signature image for use in my web application, without the need to download the entire document.

You cannot do that.  If you need to have your signature just sign a piece of paper and scan or take a picture of it.
