I have created a form in Adobe Acrobat DC that requires three electronic signatures in explicit order to complete:
After some trial and error, I figured out that the conversion from a Acrobat DC form to a DC eSign form template discards the Acrobat DC "Signer" role, and have found that the following roles translate without requiring me to manually reassign any field roles:

The head of sales dispatches the form from the DC eSign website, selecting that Recipients sign in Order Entered option and entering the salesperson's email address followed by the customer's. The head of sales additionally checks I need to sign and specifies that they will be signing Last. For as far as my intuition and research into the documentation extends, it seems to me like everything should function properly at this point. However, when the form reaches the salesperson, it always assigns the Participant 1 role to the Sender fields, the result of which being that the salesperson is asked to sign for both themselves as well as the head of sales at this point. When the document finally reaches the Sender, head of sales, for signing, they are asked to do so in an automatically generated signature field tacked onto the bottom of the form.
One page of the documentation states that the Participant 1 role will be assigned to Sender fields if the sender specifies that they need to sign First - which leads me to believe it should be interpreted as it's own unique participant role associated with the person dispatching the document when I need to sign Last is specified. This answer suggests using the last role for this purpose - however no such role exists, though the implication may be to use the Participant N role, where N is total count of participants.
So I have a couple questions, here:

As per my recommendation, I would insist on using Participant role while creating template in EchoSign. So, the sender role would become Participant 1 ( if sender signs first) or Participant 'N' if he signs last.
