I've read most of the other posts I could find about notifications and played around in my settings, but couldn't seem to find an answer to this...
I send a lot of contracts to individual signers, but with 3 other people from my org cc'd who need to receive the final signed document. Is there a way that I can avoid notifying these cc'd folks when the document is first sent for signature, only when the final signed copy is sent back? Don't need to hit their inboxes with yet another unnecessary email to delete if I can prevent it.

Yes. You can choose who receives what. Go to Account - Personal Preferences - My notifications.

Thank you for reaching out.
If you are adding the person in the CC field, you do not have the option to disable the notifications from your end when you send the document for signature. You can disable notifications for your account and the account shared with you.

Can we add as feature of Adobe Sign that cc'd emails will only receive the final copy instead of being notified in the early stage of signing?

The CC will always get the initial email and la final email. You cannot disable this feature.
