Make Changes in Template that Outsiders can't change

Hi everyone, 

 

essentially, I want to use AdobeSign to get contracts signed by customers. For each customer I have very similar contracts, but they differ slightly. 

How can I create a template of my contract that i only change in certain places (ideally I get reminded where to change it) and then send it to my customer for their signature?

I tried creating a pdf template with fields to fill out (e.g. name, address), but there are things for the customer to fill out and things for me to fill out and if I send the document like that, the customer can see what I filled out and can change that and I don't want that. 

Can anybody help me? Thanks

In Acrobat Sign, you assign the form fields to the recipients. As you need to fill in some fields that do not need to be changed, you can prefill the fields and assign the fields that need to be filled only by the signer. So, the signer can only fill in the fields assigned to him.
