When i've created a comtract template for ADOBE SIGN previously, if I have to reuse the document (or similar), do I have to re-input the sign fields or will the previous document be saved from the time it was previously sent, and will that document be editable?

Hi there,
When you create a template and use it to send for signature, the form fields added to it will not save automatically.
There is an option on the preview page to save the document as template in library after adding form fields to document.
If you check the box for "Save to document library", the template get saved with the form fields added to it. Then you can use it next time.
