I am trying to collect paperwork for new employees prior to their first day on the job. I'm wanting to create a form that they can fill out that includes the basic personal information that we need to hire them (SSN, Date of Birth, Full Legal Name, etc.). It is easy enough to figure out how to securely send these forms to them, but I don't really care about the security of the blank forms. How can they send the completed form back to me securely? I'm pretty sure this is within the scope of Adobe DC, but for the life of me I can't figure out how to do it. Help!

The best way to collect sensitive information is to put the form on the a secure server and collect the information from the server. Email is not a secure way to transmit sensitive information. Adobe Sign might work, but any secure server will do if you have some who can extract the information on a server.

If you have Acrobat DC, then you can use Send for Signature to do this. It doesn't use email to send/retrieve the form data. You only receive notification that you need to sign or a form has been completed through email. Send for Signature is Adobe Sign integrated into Acrobat. Alternatively, if you don't have Acrobat DC, you can subscribe monthly to Adobe Sign. Here is some background on security and trust for you to review: Trust center: security, compliance, availability | Adobe Sign.
