signature preview differs from final signature

I am using an iPad Air + Adonit Jot Pro Stylus with Adobe Fill & Sign ver. 17.01.00 and iOS 10.2.0 and currently I am experiencing an issue where the preview of a signature looks different than the final one applied to the document. It's sometimes subtle, but sometimes more extreme (i.e. actual periods or parts of letters missing). I've tried on a second device with similar results. Has anyone else experience this? How does this affect the legality of the document/signature in case the dot above the 'i' in my name is missing?  In the attached example you can see the differences side-by-side, could be considered minor but this shouldn't be happening right? Thanks for any assistance!

Quick update, I tried the workflow without the stylus just using a finger with same results. basically if I create a series of dots and dashes, dashes show up in final signature but none of the dots do.
