Why is Adobe Sign changing Asian surnames to English?

I put in an email address for a signer with an Asian name. I got an email from the person asking why his last name was given as Green instead of Chiang. I apologized and said I would send another, figuring it was some kind of autocorrect. However, when I went in, I discovered that I could not change the name. So I deleted the form and started over putting in the email address with no name. Once again it created a document addressed to Green instead of Chiang.

I tried a second email address for him, that had only his first name (which is an American name) and that worked.  However, I think we still should figure out what is amiss here.
