Hi there. Does anyone know why Athelas won't activate on an iMac Pro running Big Sur?

It's very important to report bugs in beta systems to the system maker.

This is a question with regards to the Adobe Fonts Service, not a general Type & Typography question. Moving to the appropriate community.

On behalf of Adobe …

Adobe does not support running any of its applications or services on pre-release versions of operating systems. MacOS 11 is absolutely not a released operating system version. At this point there are quite a few known bugs, anomalies, etc. in even the latest code from Apple, most of which we hope will be fixed by the time this OS version is officially released. We are already being told that some of the OS bugs found in the beta releases will not be fixed until a patch / service update release after MacOS 11 is initially released!

Although it may be “neat and cool” to be the first one on your block to use a pre-release of a new OS version, it is exceptionally imprudent to use such beta test software as the foundation for your production work.
