in workspace, instead of changing the export preset for each file one by one manually, how do I change it once across all files or apply a default to all files? I want to use a custom preset I saved on all files that I drag in to export

Select all in the Queue. From one item change the format to the format of your custom preset, then select your custom preset from the preset popup. It should be applied to all selected item. The next time you add something to the queue it should use the last selected one, in your case your custom preset. That is then the default for future exports until another preset is used.

In addition to following Sven's instructions, you can create a Watch Folder.

Any files that you add to the Watch Folder get encoded to the Preset or Presets applied to the Watch Folder.
