Thank you for reaching out.
As of now there is no option to restrict files to upload to cloud. But we now have option available to save files to your device. And if you want you can later delete the files from your cloud account. You can delete by visiting to your profile at documentcloud.acrobat.com login with the same Adobe ID you have on Adobe Scan.
