If I send a document to multiple emails for signature can the recipients view the email addresses or contact information of the other recipients?

If there are multiple Signers on the document then they won't be able to see the fields assigned to the other Signers.
So, signer won't be able to see other signer's email address, signature or the information entered in the field that was assigned to the other signer.
However you Signers can view the email addresses of the other signers in the Audit report.

The feature you are referring to is called Mega Sign feature. Which is available in Adobe Sign Business & Enterprise account.
To avail it you will have to upgrade your Adobe Sign Individual account : Adobe Sign plans for individuals and businesses | Adobe Document Cloud
