I have a shape that is a path made up of two strokes, one for the grey tail and one for the tail's outline.
I'm trying to make the end of the tail white, which would be easy enough if I just created another shape.
However, I need the white part to move along with everything else as I animate the anchor points and handles, as if it were part of the same shape.
Does anyone have any suggestions on how best to do this? Thanks!

Thanks for writing in.
Once you're done animating the tail - you can duplicate it, change the color as you like, and then add Trim Paths to trim the upper portion of the tail.

Where you see parent and link. When the cat tail is in its start position drag the pick whip (curly cue thingy) from the white tail to the tail that you're moving. The white tip should then follow the motion of the tail.

Another option would be to change the fill for the tail to a gradient, and tweak the gradient points to get the look you want.
