There's a couple of different places where you can change the shape's colour. Are you using the Fill setting in the shape or have you added another fill? Can you post a screenshot of your whole After Effects window, with the shape expanded on the timeline, we can probably work out the issue from there.
You need to explain much more specifically and provide pertinent info and screenshots. Just saying that you cannot change the color is basically useless. The color could be controlled by an expression, it could be overriden by an effect or another fill in a shape layer group, it could be a layer style imported from AI or a rasterized layer with the color baked in and so on. There's just a million possible reasons and you really have to provide more info.
