Hello,
This is a bit hard to explain.
What I'm trying to do is basically capture and "flatten" a UI demo, which will be pulled from a movie file. For instance, a smart TV app home screen, as the user is scrolling through options, etc. During the movie, the camera is panning/orbiting around the TV screen as the screen is displaying this UI demo.
I just want to capture the UI demo portion, and re-map it to a custom animation. Ideally, I'd like to somehow freeze the orbiting motion, so that I may apply it to my own TV/living room 3D render.
If somebody actually knows the name of the technique I'm talking about, I can take it from here. Any help would be appreciated!

Motion Tracking, Corner Pin Tracking, Camera Tracking, or a combination of all of those techniques. I prefer Mocha AE for motion and corner pin tracking. The most efficient workflow depends entirely on the shot. If the original shot was poorly shot without any planning or trackable surfaces in the shot, it's going to be a lot harder. Your description of a camera panning around a TV screen sounds like the most difficult scenario you could devise. Personally, I would record the UI demo fill screen and worry about adding the camera movement later.
Show us the shot or at least a screen grab of a couple of frames and maybe we can help you out a little more.
