Could anyoe please tell me how to change the interface colors?  All I get is dark dark and darker

The choices in the preferenced are all that you get.

what version are you using? Ae has improved the appearance in recent versions. you can't change the hue color but you can change the contrast a great deal.

like Rick mentioned, the preferences is all you get. check under preferences->appearance
