After unistalling AE on Monday my iMac immediately started slowing down.  And I noticed that, in the cache, AE has folders over 250GB in size.  How do I safely remove anything related to AE?  thanks

Feel free to just trash any caches and other leftover configuration data. Once AE itself is removed, this really is not an issue.

When you uninstall AE the Cache files are not removed.

Simply trash the contents manually and empty your recycle bin / trash can
